Leeks Cullama

(Serves 8-10)

2 kilograms leeks, large dice
1 gram cayenne pepper
Salt and pepper to taste
10 eggs
1 cup flour
10 cloves
1 cup sunflower oil
1 clove garlic
Fresh mint and parsley to garnish

Blanch leeks in boiling water for 2 minutes. Remove and chill in ice bath.
In a mixing bowl mix spices, eggs and flour. Add leeks and shape into ball.
Deep fry in oil until lightly brown.
Remove and place in baking dish. Add 1/2 cup water and whole garlic clove for aroma.
Bake in oven at 350° for 15 to 20 minutes. Remove and plate. Garnish with parsley and mint.
