1 cup medium ground cornmeal
1 cup all purpose flour
2 Tbsp sugar
2 tsp baking soda
1/2 tsp salt
1 whole egg
1 cup whole milk
2 Tbsp clarified butter or vegetable oil
Mix dry ingredients together and then add wet ingredients; stir until just combined. Be careful not to over-mix.
Mix in any fillings you would like; Dungeness crab works well. Fry at 350ºF, until dark brown and crispy.
Serve with your choice of condiments: maple butter, jalapeno jelly or Louis dressing.
