Black Pepper Fettuccine

INGREDIENTS

9 large organic eggs

25 oz all purpose organic flour

13 oz organic semolina

1/2 Tbsp salt

1 Tbsp black pepper, freshly ground

1/4 cup organic olive oil


METHOD

Put all dry ingredients into mixer. Use a paddle, not a dough hook. Mix for two minutes. Add eggs and olive oil. Mix two minutes. Scrape down bowl. Mix for two more minutes. Dough will be a bit dry. Divide in two. Cover with plastic wrap for a minimum of 1 hour before rolling.
